    Chocolate grows on trees!? The cacao tree is a small evergreen tree native to the deep tropical regions of Central and South America. Midges are the insects that pollinate these cacao flowers. Once these flowers turn into fruit, its seeds inside are processed to make cocoa powder and chocolate. These pods grow to be about the size of a small football and will be yellow, orange or red when ripe. Inside the cacao pod are between 25-50 white seeds; the rind is discarded and the seeds must be fermented and dried for weeks in order to become cocoa.  Once the seeds are dried, they are roasted for approximately 30 minutes. The seeds are then cracked and de-shelled; the resulting pieces of beans are called nibs. Nibs are taken and ground up even more into a thick, creamy paste known as chocolate liquor. The chocolate liquor is what is processed into the many fine products found at Chocolates by Grimaldi!

If you want to keep your true love's heart beating strong,” Susan Ofria, clinical nutrition manager at Gottlieb Memorial Hospital in Illinois, said “the real food of love is dark chocolate and red wine.” In moderation, red wine and dark chocolate are good health choices not just on Valentine's Day, but for any occasion. When you visit Chocolates by Grimaldi, pickup a box of our dark chocolate covered almonds or delectable truffles before you head to one of Grand Haven’s wineries: Lemon Creek or 12 Corners Winery. There are positive components in both red wine and dark chocolate that are very good for your heart, both contain resveratrol as well as antioxidants, which have been found to lower blood sugar. Red wine is also a source of catechins that improve "good" HDL cholesterol. Ofria, a registered dietitian at the Loyola University Health System's Melrose Park campus is also a nutrition educator; she recommends the following list of heart-healthy ingredients for February, which is national heart month, and for good heart health all year.

    Dark Chocolate:"Truffles, soufflés and even hot chocolate can be a good source of resveratrol and cocoa phenols (flavonoids)."

    Red Wines: "Pinots, shirahs, merlots -- all red wines are a good source of catechins and resveratrol to aid 'good' cholesterol."

    Salmon/tuna : "Especially white, or albacore, tuna and salmon are excellent sources of omega-3 fatty acids, and canned salmon contains soft bones that give an added boost of calcium intake."

    Flaxseeds: "Choose either brown or golden yellow, and have them ground for a good source of omega-3 fatty acids, fiber, phytoestrogens."

    Oatmeal: "Cooked for a breakfast porridge or used in breads or desserts, oatmeal is a good source of soluble fiber, niacin, folate and potassium."

    Black or kidney beans: Good source of niacin, folate, magnesium, omega-3 fatty acids, calcium, soluble fiber.

    Walnuts and almonds: "Both walnuts and almonds contain omega-3 fatty acids, vitamin E, magnesium, fiber and heart-favorable mono- and polyunsaturated fats."

    Blueberries/cranberries/raspberries/strawberries/cherries: "Berries are a good source of beta carotene and lutein, anthocyanin, ellagic acid (a polyphenol), vitamin C, folate, potassium and fiber."

Grand Haven will have various local business participating in an “Around the World” wine tour. Catch the trolley to come to Centertown to taste wines from various regions famous for their wine. Chocolates by Grimaldi will be representing France and will serve two different wines: Vouvary, B&G, France featuring soft aromas or white peach, quince, apples and white flowers and also serving Chateau Terte Bordeaux, B&G, France containing sweet red fruits with violet notes. Wine tasting packages available for $10 per person and includes a commemorative wine glass and 5 starter tasting tickets. Additional tickets are $1 each, must be 21+ with a valid I.D. to participate. We will also be hosting two local artist: Chris Hornbys and Kim Talaga during the Wine About Winter Walk! Our float will boast out wooden lighthouse and will be decorated with Christmas lights. The route will begin down Franklin Avenue to Harbor, make a right to Washington & follow along to Central Park to follow by the lighting of the Community Christmas Tree with Mr & Mrs Claus. Be sure to stop by our shop on your way for a cup of the BEST HOT CHOCOLATE in town to keep you warm during the parade.
